As for my day, I’ve had this strange anxious feeling all day. We are just 8 weeks away from our huge meeting and I’m feeling so overwhelmed because I still have so much to do. It’s not much fun going to work these days when I’m so stressed. I need to find my calm, happy place – Om, Om….

For lunch, I had a simple sandwich made with about 1 oz of low-fat salami, sliced ham, and piece of Swiss cheese, all on a slice of Brownberry Double Fiber bread. This bread has 6 g. of fiber in just one slice – that’s more than 20% of the recommended daily fiber for the average adult! I also threw in a few grape tomatoes on the side.

Later in the afternoon, I was getting very tired and had that sinking feeling in my stomach that I get when I’m stressed. I needed to get out of the office for a bit, so I headed to Barnes and Noble for a quick browse of the latest magazines. And, I also picked up one of these babies on my way out the door…

Ahh, just what I needed to keep me awake all afternoon.

I didn’t get home from work until almost 6:30 PM and really didn’t feel like making a big dinner. My husband was working late, so I just made a simple homemade turkey-veggie burger…

First, I sauteed a bunch of veggies – like carrots, yellow peppers, onions, and grape tomatoes. Then, I mixed all of the veggies with about a 1/2 pound of lean ground turkey meat and added salt, fresh ground pepper, and garlic and onion powder. From this mixture, I was able to make 4 nice size turkey patties and froze 3 of them.

Because I really wasn’t planning on having a burger tonight, I didn’t have any real burger buns in the house. But, I made due with another slice of the Double Fiber bread.

Now, I am so zonked that I need to call it a night. Tomorrow is my off day for running, so I feel like I should either take advantage of the free morning and sleep in, or get up just as early and get to work before 8 AM. Stay tuned to see how that one turns out!

New Look for Running With Cake!

RWC To Get New Theme!

I am so happy to be feeling better and to have my appetite back. But, I am even more thrilled to report that Running With Cake will be getting a new theme!! Yeah! I’m so excited. My husband, the technology guru (seriously, he had a story written about him in the newspaper that called him this), is going to be giving RWC a more updated and fresh look. I’m not sure when it will be finished, but look for it in the very near future.

As I mentioned above, I think I’ve finally kicked this flu bug that I’ve had for the last 3 days. So, when I woke up this morning, I decided to do my normal Sunday morning run. I started my run around 9:30 AM, which is nearly 3 hours after I usually start my run during the week. By that time of the morning, it was nearly 80 degrees outside. That was a big mistake. To add to my heat challenge, I felt like I had absolutely no energy – like I was running with a headwind, uphill, for the full 4 miles. I even had to walk about a minute to catch my breath. Some people would say that I should have skipped running today, until I was feeling 100% again. I rarely skip my run, even if I’m not feeling well. I have to be seriously ill – we’re talking swine flu, to have me not run. I don’t recommend this hard core running attitude for everyone. In most cases, it really is good to take a day off from running or other exercise when you’re really NOT feeling well. Maybe I should following this advice next time.

Anyway, by the time I pulled my sweaty self onto the doorstep, I was pretty exhausted and starving. So, for breakfast, I made a huge Greek yogurt parfait…

I started with one container of Oikos nonfat Greek vanilla yogurt, and mixed in a whole nectarine, about a 1/2 cup of Kashi Go Lean Crunch cereal, and a dollop of all-natural creamy peanut butter. I thought it would be a good combination because it was mix of all of my favorite things – yogurt, fruit, peanut butter, and crunchiness. Well, nectarines and peanut butter do not make the best flavor combination – lesson learned. It was still edible though.

After breakfast, it was little housecleaning and a discussion or two about my new blog theme. Then, it was time for lunch. Being gone last weekend really threw us off of our grocery shopping schedule – so our pantry is pretty bare. Thankfully, my husband whipped up a very simple but tasty lunch for us….

Trader Joe’s wheat penne pasta with Newman’s Own Organic Marinara. The sauce was a little bland – but that’s marinara for you, so I added a ton of parmesan cheese. Much better.

Now, I really must get to the grocery store or I will be eating cereal for dinner tonight. Have a great afternoon all!


Bleary-eyed Morning

Good morning everyone. I don’t know about all of you but I am so tired this morning. Thank goodness Wednesday is my off day for running. I went to bed at 11 PM and woke up at 5 AM and couldn’t go back to sleep. I think it’s because I’m stressed about work. This mid-summer/early fall is the busiest season for me. So right now, all I’m thinking about is work and blogging.

Today is no exception. I have a meeting that starts in about 20 minutes and lasts for the ENTIRE day. I’m hoping I can sneak away at lunch for a quick break and upload photos.

Although I was still very full from last night’s business dinner at the winery, I knew I needed to eat something for breakfast. I also needed to choose wisely – I needed something that would keep me going until lunch at 12:30 PM, because there was really no time for a break, or eating, before then.

I decided on an RWC staple, Stoneyfield’s Oikos Greek yogurt, vanilla flavor.

I wanted to give the  yogurt a little extra punch of nutrition so I added about a 1/2 cup of Kashi Go Lean Crunch cereal for more protein and fiber and watermelon chunks for vitamin C (I feel a cold coming on so I’m trying to stock up).

This tasted awesome, although it was almost a little too filling for me.

Now, I’m heading into my meeting and plan to take a big cup of Tazo Awake tea – so I don’t fall asleep!

A Blue Danube Dinner

We had such a great evening listening to live classical music outside in a picnic-like setting. The orchestra was playing famous waltzes, including the Blue Danube. I don’t know how to waltz but when they played the Blue Danube, I really wished I knew!

Before the performance, we walked around the concert park to browse some of the vendor tables. They had a children’s instrument petting zoo, where kids could actually play a variety of instruments from strings to brass. Whole Foods also was exhibiting. The store was giving away granny smith apples (Yes, I took one for tomorrow’s lunch!) and samples of a bunch of all-natural hair/skin care products. Check out my loot…

This is Jason’s Lavender and Rosemary curl defining conditioner. I’m looking forward to using this because I have naturally curly hair and need everything I can get to tame it!

And this is Avalon Organics Peppermint Hand and Body lotion. I plan to put this on my heels and feet before I go to bed. I’m hoping it makes my rough runner’s feet a little smoother.

The concert started at 5 PM sharp and our classical music entertainment was complemented by an awesome picnic dinner:

Three-layer hummus from Trader Joe’s! I bought this a week or so ago and have been waiting for the right occasion to try it. The hummus included the flavors of red pepper, regular, and cilantro. My husband raved about the cilantro flavor and I loved them all.

We brought cut-up veggies as well, but I’m still a little veggied out from my huge, but disappointing, salad at lunch. So no dinner veggies for me.

The performance only lasted until 6:30 PM, so we waited until we returned home to eat our dessert…

A raspberry white chocolate swirl cake. It was so light and fluffy and just the right amount of sweetness. I’m not usually a white chocolate fan, but I loved this cake!

Now, it’s off to bed for me because I have a really busy week and it all starts tomorrow. Have a great night everyone!

Organic Food Provides No Health Benefits

Before I get into a recap of my afternoon/evening (and an awesome freebie I had), I wanted to share with you the latest scoop on organic food.

Organic Food Is Not As Healthy As It Seems!

If you are one of the nearly 75 percent of Americans who pays extra for organic food thinking it is healthier, you may want to save your money. New evidence suggests that organic foods hold no added health or nutritional benefit compared with nonorganic foods.

In a study published this week in the American Journal of Clinical Nutrition, researchers from the London School of Medicine found no differences in most nutrients in organically or conventionally grown crops, including vitamin C, calcium, and iron. The same was found for meat, dairy, and eggs.

Some consumers also believe that organic foods provide a significant benefit over ordinary foods because they are grown without the use of synthetic pesticides and artificial fertilizers, among other things. However, some experts believe there is insufficient research on the long-term effects of pesticides on humans.

RWC Note…. Although I strive to eat all-natural foods, I don’t necessarily choose organic over nonorganic because it’s better. When I do go organic, it’s because: 1) organic food may be the cheaper option (but this is rare) or, 2) among some all-natural food brands, organic may be your only option (so was the case in my Newman’s marinara seen above.)

So, the next time you’re deciding between organic and non, you may want to base your purchase on cost value rather than health-related value.

Back to may day….

I ran more errands this afternoon but did manage to get out to a local park to stretch my legs a little more. I also made an awesome sausage-pasta dish for dinner:

I call this dish my Italian Sausage-Pasta with Leeks. It is absolutely yummy and has become a standard in the RWC household. Here’s what you need to make it:

RWC Italian Sausage-Pasta With Leeks Recipe

  • 3 links Italian sausage, casings removed
  • 1/2 small carton of button mushrooms
  • 2 tbsp olive oil
  • 2-3 large leeks (white parts only, sliced length wise, then crosswise into 1-inch half-circle pieces – rinsed)
  • 2 bell peppers (any color you like, cut in long thin strips)
  • 8 oz of short pasta, cooked and drained (rotini, shells, or campenelle)
  • 1 tbsp butter
  • 1 shallot, minced
  • 1 cup chicken stock/broth

Add the oil to a large saute pan. Add chopped Italian sausage and mushrooms to the pan and saute until sausage is thoroughly browned and mushrooms are cooked through, stirring constantly so meat does not burn. Add leeks and bell peppers and saute until veggies are tender (but not mushy) about 8 minutes. Add butter, shallot, and broth, and cook on medium-high for 5-8 minutes or until some of the juice has evaporated a little. Add cooked pasta (that has been drained) to the sausage mixture and mix thoroughly. Serve sprinkled with parmesan cheese.

Serves 4 people.

If you like Italian sausage, I can almost guarantee you will make this dish more than once! I have used turkey Italian sausage before and it tastes just as good (although my husband would argue this point). I also like to change up the color of my peppers to give the dish a little variety. You can really add more than 2 peppers if you like, because they give the dish so much flavor!

My husband and I were pretty full, so we decided to head up to the local outdoor mall to walk off some of our dinner. We also decided to get a little treat for ourselves – ice cream!

Cold Stone

We went to Cold Stone Creamery – which we love but don’t go there very often because it’s so expensive. I had a kid’s size French Vanilla with chocolate cake – fantastic! And, to make things even better, our ice creams were free because they made a mistake on our bill (overcharged us by more than $4.00 – how does that happen?) The manager said it’s store policy to comp the order if they make a mistake on your bill. I was very impressed by this great customer service and especially appreciate that I didn’t have to shell out $10 for ice cream.

Now, I’m off to bed. Yoga starts at 8 AM tomorrow!

Nuts and Bowls

Hello All. Hope you had a wonderful day. My day was crazy busy with meetings. I also sat in our office library for about 4 hours reviewing more video footage for a tribute video I’m working on.

Even though I was heads down for most of the day, I did take a break for lunch. I had planned on going out to eat but I honestly was not very hungry. I decided not to waste my money and calories on restaurant food when I knew I really wouldn’t enjoy it. Instead, I had another yogurt-fruit bowl.

My yogurt bowl was made with a base of Trader Joe’s Organic Greek Yogurt in vanilla flavor. I just want to clarify that I do not eat organic food because it’s better tasting or better for you (more on this topic in another post). I try to choose foods that are all-natural (organic food falls into this category) and sometimes organic is the only choice at the time.

To my yogurt, I added a ton of chopped walnuts (great source of omega 3’s!), a few flakes of coconut, dried pineapple and bananas, and a handful of fresh blueberries (love those antioxidants). It was awesome and looked very cool in the new bowl I scored from the concert a few days ago. The bowl even came with a matching spoon.

And that my friends was the only thing I ate for the rest of the time I was at work. That’s how filling it was! 

When I finally arrived home from work around 6:30 PM, I still wasn’t that hungry. I made a simple and small taco salad bowl. I threw in a a bunch of lettuce, some turkey taco meat from Monday’s dinner, cheddar cheese, and grape tomatoes.

It was just ho-hum, but satisfying. But, now that my stomach has settled a little, I’m off to do some yoga.

Lunch in the Garden Can Boost Your Mood

Hello everyone. I had an awesome afternoon today. My team went out to lunch at a local botanical garden. I just love my job!

I was so extremely tired before lunch, but then when we arrived at the gardens, I seemed to perk up – and wake up – a little. It’s funny how your environment can affect your mood like that. I mean, how can you not be happy and inspired by all of this color…

Before venturing into the garden for a quick stroll, we ate at the little garden cafe. Although the cafe has a very limited menu, what they serve is all natural and the produce is all organic. Even the plates and utensils are environmentally friendly – they’re all biodegradable. 

For lunch, I had a very tasty grilled veggie panini made with portobello mushrooms, roasted peppers, tomato, and goat cheese on focaccia bread. The presentation of the food was quite lackluster – it was served in a cardboard holder – but the panini made up for it.

The sandwich came with a few crinkle chips, but I only ate a few. I wanted to save more room for the yummy sammy!

After lunch, we headed into the gardens and they were amazing! They reminded me of gardens I had seen in Europe. We only spent about 20 minutes there, but I was still able to get some great shots.triangle garden

It was a beautiful day to take in all of the sites at the garden. And, I just love sneaking in exercise on my extended lunch hour. It makes the day go by so much faster and I burn a few calories too!

Although I was pretty full from my panini, I wanted a little somethin’ somethin’ in the afternoon. So, for a quick treat, I ate the lemon pound cake that I saved from my trip to the gardens.

It was so lemony and sweet! It tasted a lot like Ina Garten’s yogurt lemon cake recipe, which I absolutely love.

I was still a little full by the time I arrived home from work at 6 PM, so I had a lighter dinner than I planned.

It was a simple dinner of roasted veggies, with about 1 cup pasta with marinara sauce. I also added 3/4 of an Italian sausage for protein and spicy flavor.

I have a few more things to get finished tonight, so gotta run! Have a great night all.

Super Spinach = SuperFood

Boy, did I have a little scare this afternoon. I was going through some of my blog photos and ended up deleting a bunch of them. I didn’t even notice that they were gone until my husband sent me a message from work saying that a bunch of my photos were missing from my posts. Panic set it. But then after I collected myself and got to the root of the problem, I calmed down a bit. Luckily, I had saved all of my photos in a folder on my computer and was able to reload the ones that I lost. Whew, that was close!

Aside from that, I had a pretty decent afternoon, catching up on reading and blogging. Oh, yeah, I had a little lunch too!

Spinach Salad

I had a wonderful spinach salad with homemade raspberry vinaigrette dressing. This was my first time making and eating a spinach-based salad. It was also my first time making the vinaigrette.

My husband and I have really been getting on the spinach bandwagon these days – if there is such a  thing. It’s been said time and time again that spinach is one of the superfoods, packed with everything healthy under the sun. Ok, that’s exaggerating a little, but spinach really does have tremendous health benefits. It’s full of omega-3s and folate, while it also prevents against heart disease, stroke, and osteoporosis. Spinach also contains lutein, which is known to fight the ageing process. It’s just crazy that one food can provide so many health benefits – I guess that’s why it’s a superfood.

Wanting to eat more spinach, I have purchased probably 4 bags of spinach in two weeks. I try to add it to everything, sauces, risotto, etc. But, it goes bad pretty fast. So when I saw that we still had nearly 2 full bags left, I thought I should try to make use of it.

For my salad, I used:

Spinach-Walnut Salad

About 4 cups of baby spinach

1/4 chopped cucumber

1 carrot

1/2 cup grape tomatoes

2 tbs walnuts

1/4 cup feta cheese

Dressing:

1/2 cup fresh raspberries

1/2 cup balsamic vinegar

3 tbs sugar

splash of olive oil

Mix all ingredients in a blender and pour over salad. Dressing makes 4-6 servings.

Both the salad and dressing turned out fantastic. And, the combination of flavors made this salad amazing. I will definitely be making this salad again. Too bad my husband didn’t get to try it – sorry honey!

In spite of the overcast day, it was still hot and humid. To beat the heat from inside the house, I spent about 2 hours outside this afternoon in a tank top, without sunscreen (except on my face). So later today, as I felt a twinge of pain on my shoulders and back, I looked in the mirror and saw an unexpected sunburn. Serves me right for not protecting my skin!

Because Saturdays and Sundays are grocery shopping days, Fridays are usually a little light and unpredictable when it comes to dinner. We usually have leftovers or something quick – whatever is in the house that we can whip up fast. Tonight was no exception.

I made tomato-basil marinara with a side of steamed broccoli. I used Trader Joe’s whole wheat organic pasta, which has higher fiber than white pasta. Trader Joe’s pasta is also surprisingly less expensive than typical grocery store pastas – so we buy most of our noodles there.

For the sauce, I used Newman’s Own, Tomato & Basil Bombolina sauce. Newman’s Own sauces are all-natural and many are also organic. Although my husband and I usually make our own pasta sauce and freeze it, Newman’s is our go-to sauce when we run out of our own.

So, it was not the most exciting dinner, but it was still a low-calorie, all-natural, and nutritious one. 

Now I’m debating what I want for. Hmmmm…homemade cookies or chocolate peanut butter ice cream. I’ll let you know tomorrow!!!

There's Always Time for Breakfast

Good morning! I was back on schedule today with a 4 mile run. It was kind of hazy and humid outside today although it was really not all that hot. You couldn’t tell though by the way I was sweating – uck!

Have another meeting to prepare for today so I was rushing out the door. But, even in a harried state, I always make  time for breakfast – no matter how small or simple it may be.

Today, I had a quick, yet nutritious breakfast – a Dr. Kracker flatbread with a smear of all natural peanut butter. The ultimate peanut butter and crackers! This may sound like more of a snack but both the peanut butter and Kracker are loaded with protein, not to mention good fat. And after a long, sweaty run, protein and good fat are just the things a girl needs to refuel. 

Tazo Chai Tea

I also added some spice to my breakfast with Tazo Organic Chai tea. It’s not my favorite flavor – a little too exotic for me – but it was very smooth and satisfied my tea urge. I usually prefer Tazo’s Awak tea – it really gets a girl moving in the morning (or anytime really). Although I don’t mind the spicy flavor of Chai on most days, combining the spice with peanut butter and a cheesy cracker was probably not the best combination. Oh well, what can you expect from a girl on the run. 

Overall, my light breakfast gave me about 200 calories to start my day. I just hope it holds me through lunch. If not, I brought another juice Granny Smith apple, just in case.

Enjoy Dessert In a Martini Glass

I was really on a roll this afternoon – but I still have a ton more to accomplish this week. 

A few hours after lunch I was feeling a bit hazy from staring at the computer screen. I woke myself from the trance with a little snack. I nibbled on a few thin pieces of Tillamook’s Vermont White Cheddar Cheese. As “block” cheeses go, this is one of my and my husband’s favorites. I put the cheese on this baby!

You might think this is just a cracker but really this is no ordinary cracker, it’s a Dr. Kracker flatbread piece – Sunflower Cheddar flavor. If you’ve never had Dr. Kracker flatbreads, they are organic crackers made with spelt flour (wheat-free flour) and all-natural ingredients. The crackers are huge, so at 105 calories-3 g fiber, one is sufficient.

Although they are expensive, I prefer this cracker over all others because the flavor is amazing. And, the cracker is so sturdy you can load just about anything on it, from cheese to dips, and from meats to salsa. They also have to be the crunchiest cracker I’ve ever eaten.

I’ve seen Dr. Kracker products at Whole Foods Markets and Fresh Market, but I’ve also heard that Costco sells them – I’m still searching for them in their miles of aisles! Plus, if you’ve ever been to Jason’s Deli, they have individually wrapped Dr. Kracker crackers in their salad bar. I always snag one extra for a work snack the next day.

For dinner, I finished the homemade chicken and rice soup that I made on Saturday. It was probably a little too warm out for soup but who am I to let good, healthy food go to waste?

I enjoyed the soup with a side of 12-grain artisan bread from Fresh Market, with a little of the dynamic duo – Trader Joe’s olive oil and balsamic vinegar. So yummy!

With just a small bowl of soup and a little bread in my belly, I left plenty of room for dessert. I finished off the chocolate peanut butter ice cream in the freezer (about 1/2 cup) and had mixed feelings about seeing the bottom of the carton. I was sad to see it was gone, but happy that it would not be in my house anymore!

This time, I enjoyed the ice cream in a martini glass. That may seem a little eccentric, but my husband and I have a load of glassware that we received for our wedding that has basically gone untouched since we put it in our cabinets. I often wondered why we were waiting for a big dinner party or the president to come for dinner to use our fun glassware. So, I decided to live on the edge a little and use our fancy stemware –  martini, margarita, and wine glasses –  for everyday use during meals. Also, these glasses are typically smaller than regular drinking glasses and much smaller than bowls (such as those for ice cream). So it’s really difficult to overfill them, a technique that helps you eat less but enjoy what you do have to the fullest.

Besides – chocolate ice cream in a martini glass – now who wouldn’t drink to that!
