Learn to Stop Eating Before You're Full

Hey all! Apple picking was so much fun! I have loads of pictures to share but I’m going to wait until tomorrow AM to post those. Otherwise, I would have WAY too many photos to put in one entry.

After apple picking, we all headed out to lunch. We went to a very popular Chicago chain restaurant called Portillo’s (if you’re from the Chicago area, you know exactly what I’m talking about!). Well, I normally LOVE Portillo’s but today, I just wasn’t in the mood for their food. Luckily, there was a Corner Bakery, another Chicago-area favorite, just  a few doors down. While everyone else was ordering their food at Portillo’s I ran over to Corner B and got me a bistro-style lunch to bring back and eat with the others…

9.5 lunch3

I had a cup of baked potato soup with bacon and a Mediterranean salad. As I’ve mentioned before, this soup is one of my absolute favorites to eat and it’s super filling. It was so filling that I couldn’t even eat the salad that came with it! It didn’t help that I chowed on the equivalent of two Gala apples just an hour before. But apples are healthy and full of fiber, so I didn’t care.

I took the salad home and had intended to eat it for dinner, but my husband had other plans. With summer winding down, chicken tacos seemed to be a great grill-friendly dinner to have on a cool and comfortable evening. We started out dinner with a little Frontera all-natural salsa and tortilla chips…

9.5 dinner2

If you’re not familiar with Frontera salsa, it is made by the famous Chef and restauranteur Rick Bayless who is the Chef at Chicago’s Frontera Grill. Scott and I have eaten at Frontera and loved it. Now, Scott wants to eat at Bayless’ Topolobampo, Frontera’s sister restaurant, but it’s really expensive (for gourmet Mexican food) so I’ve been holding off for a really special occasion. One thing is for sure, Chicago has some of the most amazing restaurants in the US and I’m looking forward to trying all of them some day – ha!

9.5 dinner1

The salsa in a jar was very good as well. It has a roasted tomato flavor which I love, just a hint of garlic, and not too spicy. Love it!

Then came the main event – grilled chicken tacos!

9.5 dinner4

They tasted as amazing as they look – no joke! The chicken marinade my husband uses is similar to his fajita recipe, but not as tangy. I stuffed my whole wheat soft tortilla so much that it nearly fell apart (but that’s what forks are for, right?)

9.5 dinner5

See, it’s bursting at the seams – hah hah! I only had ONE taco and then ate a little more Trader Joe’s guacamole and salsa – I’m all about the appetizers!

9.5 dinner3

And, if it’s one thing I know, it’s to stop eating just before I get full (or when I feel satisfied). I very rarely let myself get stuffed because I hate that “just ate a bag of rocks” feeling in my stomach. I also try to eat slow so that I actually recognize that I’m full (or not) before I eat too much. That’s a key factor for me in keeping my weight down and being able to fit into my Gap jeans year after year. Try this strategy, you may be surprised at how it can work for you.

Now, I’m sitting at Barnes and Noble contemplating a Starbuck’s night cap – should I get a skim hot chocolate or a new pumpkin spice latte – hmm…decisions, decisions.

Stay tuned tomorrow morning for an apple extravaganza!

Walnuts – Small in Size, Big on Nutrition

Hey Friends! My hair is officially shorter than it was this morning thanks to a brand spankin’ new haircut! I do like it, but it’s styled a little too flat for me right now (and that’s saying a lot since I like my hair straight) so I decided to wait until tomorrow to take a photo.

Prior to my haircut I ran to the grocery store and to Trader Joe’s just to pick up a few odds and ends, including Yogi antioxidant green tea which my husband loves. For lunch, I originally made a simple sandwich, but then doctored it up with a few Mezzetta red pepper slices and provolone cheese…

9.4 lunch

For some reason, I’ve been in a potato chip mood lately. Today, I had more of the Cape Cod low-fat plain potato chips – love them!

After lunch, I was able to get a little work done answering emails and even doing a little house work. Then, I actually sat outside in the warm sun and read my new Real Simple magazine – and I just happened to have a Starbucks mocha frap in my hand at the same time. I’m such a multi-tasker like that.

Friday nights are typically my night to cook. But, whenever Friday rolls around, I never seem to want to cook anything. Tonight followed that same pattern. So instead of me cooking the planned chicken stir fry, we opted for pizza takeout. I know, it’s such a cliché Friday night dinner, but it was gourmet pizza!

9.4 dinner1

My husband and I split a plank-style pizza. His half had pepperoni, spinach, and red peppers; mine had spinach, goat cheese, red peppers, mushrooms, and pesto sauce. I’ve had this many times before and it is so awesome each time I order it.

9.4 dinner2

I was pretty full after I finished my pizza (all but two pieces) but just a few minutes ago I decided to end the night with a little spumoni….

9.4 dessert

I had about 3/4 cup Edy’s spumoni and added about 1 tbsp of walnuts to the cold, creamy treat. I’ve been adding walnuts to everything lately – well, nearly everything. Most people know that walnuts, and many other nuts, are high in fiber and good fats (MUFA). But, new research from the Journal of Clinical Nutrition shows that walnuts may actually help lower cholesterol more than fish. I am so glad to hear that news because I do NOT like fish, but LOVE walnuts. Finally, I have an argument for not eating fish!

Tomorrow, we are headed apple picking with my husband’s whole family. It’s a tradition we started a few years ago. After that, we all go out to lunch, then head home to start out apple-treat baking. I think a homemade apple pie is in my near future. Stay tuned for a recipe!

Have a great night all.

Now Playing…Chocolate-Covered Mulberries

Today went by really fast because of all of my morning meetings and the great staff appreciation luncheon. I have to say that I looked a little funny taking pictures of the food – kind of like the wedding photographer who wants to take pictures of every little detail. I’m just glad no one asked me why I was taking the pictures.

The veggie burger I had for lunch kept me extremely full the rest of the afternoon. I wasn’t hungry at all when I arrived home from work at 6:30 PM. But around 7:30 PM I decided to make a little somethin’ somethin’…

IMG_4384

I made a half of a peanut butter and jelly sandwich. Funny, I used to hate these when I was a kid, but now I can eat them for a quick meal or snack. I made my sandwich with a dollop of MaraNatha all-natural cream peanut butter…

IMG_4380

And then topped that with some Knott’s strawberry preserves. I also had a few (ok, more than a few!) Cape Cod low-fat potato chips on the side.

IMG_4385

The sandwich was just enough to make it so I would not go to bed hungry. It’s weird saying that knowing that there are people who go to bed hungry every night. I thought I was done eating for the night, but then I realized there was a surprise package at my door!!! Yeah! The folks at Kopali Organics sent me a sample of one of their superfoods…

IMG_4374

Organic, dark chocolate covered – not cherries, not raisins, not cranberries….MULBERRIES! Can you believe it? Who would have ever thought to cover a mulberry with dark chocolate or any chocolate for that matter. Come to think of it, I don’t think I’ve ever had a mulberry before. It actually looks like a blackberry but it’s a little sweeter. Mulberries also are packed with all sorts of good nutrients – antioxidants, etc – and have been shown to lower blood pressure and reduce your risk for blood clots and strokes.

I wasn’t very hungry but I decided to tear open these little babies.

IMG_4377

I really loved the taste of the mulberries. It was a nice change from the typical chocolate covered raisin or peanut. I am rather neutral on the taste of the chocolate. Normally, I really like dark chocolate, but this kind just tasted a little different than what I’m used to – not bad, just different. Maybe it’s because it is organic chocolate, which, to my knowledge, I’ve never had.

Despite it’s health properties, I don’t think this snack is ready to replace raisinets at the theatre anytime soon, but they would make a nice alternative (you’d have to sneak them though – he he!), especially if you’re looking for a snack that’s on the healthier side. In addition to chocolate covered berries, Kopali Organics also has dried fruit and other organic mixes.

Ok, I need to head to bed. I’m finally getting my hair cut tomorrow and I’m so excited!

New Research: Popcorn as Healthy as Vegetables

Hello All! Well, I never ended up going for my walk. I was hoping to walk to a new farmer’s market about a 1/2 mile from the office. But, when I was about to head out, I decided to double check how late it was open. Sure enough, it’s only open until 1 PM and it just happened to be 12:45 PM! Bummer. So, I opted to stay at the office and continue to work – not very fun, but fairly productive.

But, I did snack on some really tasty popcorn….

8.2 popcorn

It was just the microwavable kind with butter and salt, but I also added a little black pepper – so good!

There was a time when I would eat popcorn nearly every day at work. But then I became burned out on it and stopped eating it altogether. Now, I enjoy a few cups every now and then. Popcorn is actually a great alternative snack to pretzels and chips because it has way more fiber. And, my popcorn only had 25 calories per popped cup.

Not only does popcorn have more fiber, but new research presented last month at a meeting of the American Chemical Society found that popcorn has surprisingly large amounts of the healthy antioxidant, polyphenols. Polyphenols, which are commonly found in fruits, vegetables, chocolate, wine, coffee, and tea, are known for protecting against cardiovascular disease and reducing the risk of cancer. Further tests showed that popcorn contains similar levels of the antioxidants per gram as fruits and veggies. Who would have thought that popcorn would be as healthy as a salad!

For dinner, I had intended to make BBQ chicken and grilled sweet potatoes, but I arrived home later than expected AND the chicken wasn’t defrosted. Don’t you hate that?! I had to make a fast executive decision – we were going to have homemade pasta sauce instead.

8.2 dinner

And even that took longer than expected – and all I had to do was warm up the sauce! We didn’t eat until about 7:30 PM which is really late for us. I swear we’re not that old, we just don’t like to eat late.

Now I’m enjoying some of Edy’s Spumoni ice cream – one of my husband’s favorites.

8.2 dessert

He says that he likes to eat it after having Italian food because it “settles the stomach”. This is just one of my husband’s many justifications for eating ice cream and other not so healthy foods.

Ok, now I’m off to bed. We have our annual staff appreciation luncheon tomorrow, and you know what that means…more food! I’m hoping we have a few healthy selections on the menu, but what can you really hope for with free food?

Have a great night everyone!

Free Week of Yoga During National Yoga Month

Hey there. I’ve had such a long day. It seemed like it was never going to end. It doesn’t help that it was 72 degrees and sunny outside and I wasn’t able to get out for lunch. I kept hearing people say how gorgeous it was outside, so I decided to leave work earlier than planned.

Seeing as September is National Yoga Month, I headed to an outdoor mall near my house to check out the new yoga and running lines at Lucy and the Gap.

Jen-tree4

Me, in my most comfortable yoga pose and clothes!

Lucy had a bunch of brand new yoga and running gear – in fact they were just putting out some cool new t-shirts when I arrived. Lucy gear at full price is way too expensive for my budget so I have to wait for things to go on sale – I’m sure more than one of you can relate. On the other hand, the Gap had hardly anything on display, except for yoga pants, which was a big disappointment. Maybe I just need to go to their new affiliate store Athleta to fill my yoga and running gear needs.

On another note, both Lucy and Athleta have online communities that you can participate in by adding comments to a blog or attending events, etc. Way cool!

And, if you’re interested in trying yoga during National Yoga Month, check out Yogamonth.org. They have a promotion running right now where you can attend a free week of yoga classes in September at a studio near your house. You just fill out the form and it brings up all of the participating studios near your zip code.

Well, after my short and fruitless shopping excursion, I picked up dinner at Noodles cafe and headed home.

9.1 dinner1

I had a cup of tomato basil soup to which I added a bunch of fresh crumbled feta cheese. I’ve never had Noodle’s tomato basil soup before but I could have sworn this looked, smelled, and even tasted like tomato sauce and NOT tomato basil soup. I’m almost wondering if they gave me a scoop of their marinara sauce and not the soup! It was ok enough to eat though, but not what I expected. I also made a little homemade hummus bread…

9.1 dinner2

I took two very small pieces of leftover ciabatta bread and spread about 2 tbsp of red pepper hummus on top, then sprinkled the bread with fresh crumbled feta. The hummus bread was great alone and also for dipping in the soup!

There were too many rice krispy treats left from last night’s dessert, so I thought I’d have a couple more to help us get rid of them faster – he he!

9.1 dessert

I even added a dollop of MaraNatha all-natural creamy peanut butter to give my krispy a little protein and MUFA kick. The only thing that would have made this simple dessert better is melted chocolate. Hmmm….maybe tomorrow!

I’m off to do a little magazine reading and then, hopefully, hitting the sack early tonight.

Take care everyone and see you in the AM!

A Childhood Favorite

Evening everyone. I had a super productive afternoon at work reviewing a bunch of health and medical studies that will be coming out next week. I also edited a few product videos that will be released in the next month or so. See – you can accomplish quite a bit on a Monday – even without Starbucks!

Late this afternoon, i snacked on some yogurt that I brought from home…

8.31 snack

I had Trader Joe’s nonfat Greek yogurt, blueberry flavor. I swear this yogurt tastes like blueberry muffin batter – no joke!

I didn’t get home from work until nearly 6:15 PM (again – ugh!). Even though I was pressed for time, I was able to make the fastest turkey tacos ever. They were on the table, ready to eat by 6:45 PM. Snappy, snappy!

8.31 dinner1

They were also really tasty. My taco consisted of a bunch of chopped roma tomatoes; at least a cup of red leaf lettuce; Tillamook Vermont white cheddar cheese; taco meat made with ground turkey, yellow and green bell peppers, onions, and taco spices; and a big dollop of Wholly Guacamole – all on a whole wheat soft tortilla – so YUM!

8.31 dinner2

For dessert, I made a childhood favorite, Rice Krispy Treats..

8.31 dessert

I like to make them using about 3/4 of the butter that it calls for in order to cut down on some of the unneeded fat. I also added a few red and blue sprinkles to this batch just to give the krispies some color and add a little fun!

Now, I’m headed to bed…need to be up by 6 AM for my very cold run – it’s supposed to be 45 degrees tomorrow morning. There may even be a frost…I can’t believe it will only be September 1!

Also stay tuned tomorrow as I start my own daily shot of wellness with Zola juice shots.

Have a great night everyone.

A Panini Novice Makes Good

Hey Everyone! Sorry for the late post, but I’ve been gone for most of the day. I went to see my brother-in-law compete in the Chicago triathlon, which was awesome! But, I’ll get to that in a minute.

Before we headed to the city, I did my typical long Sunday run of 6 miles. It was perfect weather for running – really cool and no wind. After my run, I chowed on a protein-packed breakfast because I didn’t know when we would be eating lunch…

8.30 breakfast1

I had a container of Trader Joe’s vanilla Greek yogurt mixed with blueberries, walnuts, and a big dollop of MaraNatha all-natural creamy peanut butter. I wasn’t sure how the pb would taste with blueberries but it was fantastic!

8.30 breakfast2

So creamy and yummy – like peanut butter fluff! I also had a little more of my Zola Energy smoothie…

8.30 breakfast3

After breakfast, we headed downtown for the event. Traffic was really light going downtown and thankfully, parking was a breeze. We met up with my in-laws and my sister-in-law and her three children near the finish line.

8.30 triathlon1

Isn’t this an awesome photo! I am definitely not the triathlete type – I can swim to save my life, but that’s even debatable. But, I saw the finish line and all of the spectators and it so made me want to run a marathon. We only waited about 30 minutes before my brother-in-law came into view. And, while he was running his last 100 yards,  his youngest son ran on the course with him and they jogged hand in hand over the finish line – so cute!

8.30 triathlon2

This is the triathlete’s medal of honor – how cool is that!

After the race, we all chatted for a bit while the kids ran around. I started to get hungry so I munched on a Luna bar I had stashed in my purse.

8.30 snack1

This is my first ever LUNA bar and it was pretty tasty, although it had a slight aftertaste.

8.30 snack2

I had the peanut butter flavored bar which had 180 calories, 3 g of fiber, and 9 g. of protein. I’m sure this bar would make a great post-run or post-workout snack.

As it turned out, it took over an hour before we actually sat down for lunch at an outdoor cafe in Millenium Park. By this time, I was so hungry that I could have eaten fish – ok, not that hungry.

8.30 lunch2

I did split a chicken sandwich with my father-in-law. It was good, but not worth the $12 we paid for it. After lunch, we all said our goodbyes and we headed back home. It took about 1 1/2 hours to get home (way longer than it should have) so we stopped at Barnes and Noble for a Starbucks refresher. I had my typical Frap and enjoyed every sip (sorry, no photo!)

For dinner, we decided to use the panini maker that we borrowed from my in-laws. I made a Greek-style panini…

Stawarz-Panini3

This was my first time making a panini – a panini novice of sorts – so I was not sure how it was going to turn out. I made my panini with red pepper hummus, sauteed red and green bell peppers, spinach, hot peppers, and feta cheese. I topped it with a homemade cucumber-yogurt sauce. It was absolutely outstanding! I actually made the sandwich for Mezzetta’s sandwich contest, so I don’t want to give the recipe away just yet! But you may find it on my other blog – Bistro Chic – pretty soon!

Now, I really need to get to bed. All of this fresh air has made me exhausted. Have a great night everyone!

Good Luck Chicago Triathletes!

Hello All. I just arrived home about an hour ago from a very busy afternoon and evening. I’ll try to make this brief because I have an early day tomorrow – you’ll see why at the end – he he!

After breakfast, my husband and I headed out to run errands, go to Target, etc. Then we stopped for lunch at a Chicago favorite – Portillos! I do not eat fast food very often, in fact very rarely. But, I do love Portillos. I usually get an all-beef, Chicago style hot dog, but today I went the semi-healthy route…

8.28 lunch1

I had a gourmet garden salad with mixed greens, green peppers, carrots, grape tomatoes, and cubed cheddar cheese, topped with raspberry vinaigrette. It wasn’t the best salad that I’ve had, but I needed something healthy to balance the other thing that I ate…

8.28 lunch2

Yummy crinkle-cut French fries! I try to avoid eating French fries for the most part, because when I eat them, I just can’t seem to stop. And, Portillos fries are some of the best I’ve had – thank goodness they are not bottomless like Red Robin!

After lunch, we headed home to do a little work. My husband did paperwork for his consulting business and I did research for work and answered a few emails. I then became so sleepy that I dozed off for about 30 minutes. It was a perfect cat-nap to keep me going for the rest of the day.

Around 5 PM, we headed to a local fair/car show near our house. It was located on the grounds of a school and they were raising money for charity. I am not a car person, whether the car is old or new. But, the fair also had many local vendors displaying their products/crafts, which were fun to browse.

Dinner was a quick one at TGI Fridays. When my husband and I first moved into our house, we went to Fridays nearly every week. I have no idea why we were such loyal patrons other than, at the time, there were very few good restaurants in the area. After doing that for a couple months, I became burned out on Friday’s and never wanted to go there after that.

8.28 dinner1

Tonight, we did a double split – splitting both the appetizer and the entree. We started with one of our old favorites – the Tuscan spinach dip. It was really good and tasted just like I remember. Next, we split the parmesan-crusted chicken with 3-cheese tortellini and a side of caprese salad.

8.28 dinner2

I had so much spinach dip that I seriously could have not eaten a bite of the entree and been fine. However, I did end up eating about 1/4 of the chicken, 1 bite of the tortellini, and scoop of the caprese salad. The meal was good but I will probably not be heading back to the restaurant anytime soon. There are too many other restaurants to choose from to rely on Fridays for my meal.

After dinner, we headed to Trader Joe’s to pick up a few staples, like feta cheese, yogurt, and whole almonds. I was so surprised to see how busy the store was and it was after 8 PM!

Well, I am now off to bed. I know, 10:15 PM is so early for Saturday, but my husband and I are headed to downtown Chicago tomorrow to watch the annual triathlon! I’m so excited because it’s the first triathlon I have ever seen in person. My brother-in-law is racing in it and he starts around 8 AM. I don’t plan on getting down there that early, but we want to see at least one transition and see him cross the finish line. I can’t wait to cheer on all of the athletes. I remember running in the 1/2 marathon and feeling so appreciative of all the people who came out to cheer for us.

Because Sunday is my run day, I need to get up extra early (like 6 AM) in order to be done with my run and ready to leave for the event by 8 AM. We’re driving down there and parking somewhere near the finish line, which is probably a mistake because it’s going to be a madhouse down there. Oh well, I’ll keep my fingers crossed!

Good night!

Thanksgiving in August

Evening everyone. Because it has been raining for most of the day, I didn’t feel at all guilty about deciding to stay home all afternoon. I had a great afternoon catching up on emails and on reading. However, I did make a special trip to the market to prepare for our “Thanksgiving in August” dinner. Confused? Let me explain…

For the last few weeks, my husband has been going on and on about wanting turkey, mashed potatoes, and gravy. He gets like this around this time every year – where he craves Thanksgiving dinner in the summer. Well, Thanksgiving is over 3 months away, but I thought I’d humor him…

8.28 dinner1

For dinner, I went to Fresh Market, a gourmet market near our house, and bought a white wine and herb rotisserie chicken. I paired the fresh white meat chicken with mashed red potatoes and super sweet carrots. I also made a little homemade chicken gravy on the side.

Everything tasted fantastic but the mashed potatoes were especially good. After I boiled them, I added a little butter, a little skim milk, and a bunch of chicken broth to make them really creamy – soo goood!

8.28 dinner2

My husband, of course, loved the meal, and even offered to make dessert – double chocolate Ghirardelli brownies.

8.28 brownie

He also added some walnuts for extra MUFA. These are by far our favorite brownies because they are so full of chocolate. I’ve tried several times to make brownies from scratch, and they either turn out really dry or really mushy. If anyone has a great recipe for brownies, I’d love to get it!

Ok, I’m off to bed now. We’ve got a busy day tomorrow, that all begins with yoga at 8 AM!

Night all!

Running in the Rain

Well, it is raining for the third day in a row. I know we need the rain but come on! When I woke up this morning, it was just drizzling a bit, so I laced up my running shoes and headed out the door. It was chilly so I wore running capris and a light rain parka with a hood. I was determined to not let the rain stop me – although I’m sure my ipod had other ideas. I actually don’t mind running in light rain. It definitely keeps me cool. A light misty rain also seems to clean away all of the dirt and grime from the ground and leaves things smelling fresher than before. And, somehow, everything just seems quieter, maybe because there are fewer people outside milling about.

After my wet, but awesome run, I made a quick breakfast parfait….

8.28 breakfast

It almost looks like ambrosia salad in the photo! But really, it’s not. I mixed one container of Trader Joe’s nonfat vanilla Greek yogurt with strawberries, blueberries, and walnuts.

Seeing as it is my day off, I leisurely got ready and then headed out the door to the mall to see if there were any end-of-summer deals. Well, no real deals to speak of, but Lucy’s Fall line of running gear looks very promising.

On my way back from the mall, I met my husband for lunch at our favorite Italian hot spot…

8.28 lunch1

I had a personal pizza topped with (very few) black olives, sun-dried tomatoes, and goat cheese – oh my, this was gooood!

8.28 lunch2

I also had a small Misto salad, made with mixed greens, grape tomatoes, topped with goat cheese and balsamic vinaigrette.

8.28 lunch3

It’s time to clean up the house and do a little more reading before heading back out into the rain this afternoon.

Enjoy the rest of your day!
