Hello Everyone – 

Hey All! I’ve got to make this quick, because I have another early class tomorrow.

I had to be at class (45 minutes from my house) at 8 AM today. Ugh, getting up that early on a Saturday is NOT fun unless you are on vacation in Hawaii or Europe. I attempted to go to Starbucks for a pick me up, but after driving around for 15 minutes, I couldn’t find ANY! What’s up with that – I thought they were on every corner! All that work and I was 20 minutes late for class with no coffee to show for my efforts. Bah – humbug.

Well, I realized today that I really need to get back into my yoga routine. At class today, we learned all about resistance training and flexibility. I actually did the testing and was tested on. When the flexibility portion came around, I could barely reach past my feet – yikes! Granted, I am only 5′ 1” and have a very short torso, but I really think I should be more flexible than that 🙁 It kind of makes sense though – I read somewhere that distance runners are some of the most inflexible athletes. Hmm…I guess i would fall into that category – although I’m not proud of that factoid.

But I really kicked a-s on the crunches test – I did the max you can do – sweet! 

I was soo exhausted by the time class ended. I am really thankful that Scott had a little stir-fry action going when I arrived  home…

I didn’t think I was that hungry, but I just couldn’t stop eating tonight! I had two servings of stir-fry plus a bunch of ice cream (not pictured). I guess talking about exercise all day can actually increase your appetite – he he!

OK, gotta run. My class goes from 9 AM to 4 PM tomorrow, then it’s time to clean house – my big sister, her husband, and my nephew are arriving on Thursday night to stay with us for the weekend. Woo hoo! We have so much planned – I’ll share details later in the week 😉

What I May or May Not Have Eaten Today

Let’s play a game – It’s called, What did Jennifer eat today?

1) Breakfast = Oatmeal with walnuts or Kashi?

Answer…

If you chose Kashi you would be correct! I enjoyed a nice size bowl of Cheerios topped with a little bit of Kashi Go Lean Crunch. This was a super energizing breakfast after another hard and sweaty run on the treadmill. I keep pointing out that it was sweaty because, for some reason, it is exceptionally HOT in our basement. You think it would be cold down there – after all, it’s a basement in Chicago!

2) Lunch – A small salad or a bowl of minestrone soup?

Answer…

And the salad is the winner!! Around 1:10 PM, I was contemplating what I would have for lunch. Because I did not bring my lunch, it was very obvious that I needed to actually leave my cube to get something to eat. Then, I realized that we had an all staff meeting at 1:30 PM – oh s–t!! I ran out of the building so fast all you could see was my hair flying in the wind. First, I headed right across the street to Go Roma – super convenient I thought. Until I saw the line! My God people, it was nearly 1:30 PM, why haven’t you eaten lunch yet – I thought – not out loud of course. So, I made a side trip a few doors down to a local deli where I threw together a quick and health salad…

Although, I walked back into the building JUST as the meeting was starting, so I threw the greens in the fridge and didn’t eat them until around 2:30. I was starving by this time, but a crisis was averted.

3) Dinner – Leftover chicken and dumpling soup or peanut butter and jelly?

Answer…

Yes, I was so lazy tired tonight that I didn’t even feel like warming up soup. So, it was a PBJ kind of night…

It was rather tasty and looked kind of fancy – as fancy as PBJ can get – on my sparkly placemat from Crate and Barrel.

4) Dessert – Ice cream or chocolate chip cookies?

Answer…

Ding, ding, ding – you are correct if you guessed ice cream – Edy’s Slow-churned Butter Pecan ice cream to be exact. I swear this had lower calories for the simple reason that they added fewer pecans. They were definitely few and far between in this quart, if you know what I mean. You might as well just call it butter ice cream, with a few pecans. Maybe I’ll have better luck at the end of the quart. I will be happy to find out 😉

5) But, the real question is what did I eat today that I did NOT take a photo of:

d. All of the above

I am embarrassed to admit it, but answer D is correct. I was a junk food eating machine today. I guess that’s what happens when you only eat a bowl of cereal and a small salad all day. Blah! I guess I really am human like everyone else.

But, the two things I love most about Thanksgiving are being with my family in Michigan and going for a long run on Thanksgiving morning (it’s my preemptive Turkey Day strategy!)

It’s funny how your day can start off normal, with everything going along smoothly, then WHAM! A huge pile of bricks is dropped right on your head. Well, not actually, but that’s kind of how I felt today.

I had a perfectly lovely run this morning, bouncing along to my Christmas music and wondering what I was going to have for breakfast.

Everything was still normal at this point. Little did I know, I would need this mighty breakfast to get me through a pretty stressful afternoon.

I was called into the “principal’s” office, aka our new CEO, for a little chat. That chat turned into a 45 minute conversation about changes that were soon to come in our office. My role in all of this is to help craft tactful messages about these changes so that he can then relay these changes to the staff. The pressure’s ON! Stay calm!

Well, I guess it really did not go down in that dramatic of fashion, but still the messages will be very challenging to draft and convey. And, I can guarantee that some in the office are NOT going to like these messages. One change will really hit home with me – I can’t say now, but I’ll share details later.

Still, even with the challenge ahead, I am absolutely thrilled that he approached me to help him. I’m hoping that speaks quite a bit about my ability to do my job and do it well. 

After my exciting afternoon, I arrived home around 6:30 PM to a full made zesty turkey taco dinner. We started with a bit of guacamole of course…

Turkey tacos or even beef tacos are so easy to make and you don’t even need a boxed mix (sorry Mom, not everything needs to come from a box). You can just buy the taco seasoning spice, follow the directions on the bottle, add a few veggies while browning the meat, and presto – semi-instant turkey tacos!

Not bad for a Monday night! But wait, that’s not all…

As you all know, I’ve been on a red velvet cupcake kick for the last few weeks. So, Scott so graciously volunteered to run out to Barnes and Noble to pick up a cupcake for me.

Not only did he come back with the awesome cupcake, but he also came back with a JCrew bag – full of goodies for him though. Hmm, come to think of it, I could use a little retail therapy right now!

Bad, Bad, Yogurt

Evening Chicas!

I had an awesome run this morning, although it was cold, cold, COLD! I went from running in 55 degree weather to 35 degree weather this morning! I’m trying to run outside as long as my body (and mind) will let me, because I’m dreading going back on the treadmill for the season. Does anyone else feel this way?

I was running late as usual, so I decided to eat breakfast at work. I remembered I had a Trader Joe’s vanilla Greek yogurt at work, so I took a few walnuts from home to stir in. When I actually looked at the date on the yogurt it said November 5. Hmm…I know you can usually eat yogurt a few days past the expiration, but I thought I’d get a second opinion from a coworker. She replied, “it’s yogurt, it’s already cultured so it won’t be bad.”

After smelling it, I added my walnuts and took a few bites. I realized that it was not a smart move. It was indeed cultured yogurt – a little too cultured for me – and I consider myself a very cultured person – he he! Bad, Bad, yogurt.

I threw it out – walnuts and all (goodbye $2.50) and starting trolling the halls looking for a second breakfast. My choices were very limited, either leftover Halloween candy or a questionable bag of crackers. But then, I saw this…

And Nonni’s Biscotti it was! I very rarely eat biscotti which is kind of strange since I’m a big fan of the big CRUNCH. This lovely came from a brand new container a vendor sent to our office – just in time too!

Work is picking up a bit, but not so much that I couldn’t meet my favorite guy out for lunch today. We made a last-minute date at Go Roma. I had a lovely pairing – soup and sammie…

I haven’t had butternut squash soup in forever and today was the first time I had it at this restaurant. Fantastic! Very rich and creamy with a smooth texture.

With such a big lunch, it was no snacking for me this afternoon. I wasn’t even interested. When dinner rolled around at 6:30 PM, I had regained my appetite but really didn’t feel like cooking anything challenging. So, it was warmed up pasta sauce with homemade turkey meat balls….

This is such a comforting dish, I was ready to curl up on the couch and take a nap after I ate.

I am getting very, very sleep, so I checking out for tonight. I have the day off tomorrow so I’m planning to do a little pre-Thanksgiving Christmas shopping – ho ho! If anyone knows of any good deals, please send the info my way.

It was another glorious day in Chicagoland, which means another awesome run! I ran a very fast 5 miler but felt like I could have run 6 or 7. I am attributing my energy to not only the weather, but also the LUNA bar I had about an hour before I ran…

I received a coupon via email from LUNA saying that I could buy two bars and get one free, but I had to download the “coupon printer”. It says it’s “safe” to download this software, but I’m always hesitant to download things on my work laptop for fear of it crashing. Has anyone downloaded the coupon printer before? What was your experience?

While I was running I heard this great song that actually made me want to sing along with it. I had heard the song before but had no idea who sang it. Come to find out – it’s MILEY CYRUS!! OMG, I can’t believe I actually like a Miley  Cyrus song, but her “Party in the USA” song is so fun. I don’t plan on turning into a Hannah Montana fan anytime soon, but I will definitely not turn this song off when it comes on the radio.

After my run, I enjoyed a quick yogurt bowl while getting ready for the day…

I had Chobani’s vanilla Greek yogurt with a handful of walnuts for added MUFA and crunch – super filling and so YUM!

After breakfast, we spontaneously decided to head out to the zoo for the day. Although it was spontaneous, it seemed to take us forever to get out the door. We didn’t actually arrive at the zoo until noon! Of course on the way, we made a couple stops, including Barnes and Noble for my sweet indulgence on this “last day of summer”…

Because we arrived at the zoo right at lunch, we plopped down at a picnic table and enjoyed some homemade salami/ham and cheese sandwiches…

Although we’ve been to this zoo many times, today was the first day I had ever seen the bats. Creepy but kind of cool. The giraffes and Meerkats are more my style.

Dinner was another Every Day With Rachel Ray recipe from this month’s issue. Tonight it was the BLT Creamy Mac & Cheese

Woo Hoo – another recipe winner! This recipe was fantastic, although I’m guessing pretty high in calorie due to the cream cheese and bacon. Ok, did I mention that I like bacon? I was never really a fan of bacon until I was an adult and learned to make bacon the exact way I like it – crunchy! I try not to eat too much bacon, but when I do I buy/eat the uncured/all-natural kind. Bacon really kicked this dish up to a whole new level and the added spinach (substituted for arugula) gave the dish some much needed veggies. This dish is definitely going into my recipe book, not only for the flavor but also because it only took about 30 minutes to cook!

After dinner, we decided to celebrate my last evening before going back to work by heading to the ice cream shop – Maggie Moo’s, which is similar to Cold Stone, although I think they have better-tasting ice cream than Cold Stone. I was so torn between Red Velvet ice cream – because you all know I’ve been on this Red Velvet kick – but decided to go with the…

Blueberry Muffin ice cream! I just adore this specialty flavor – although it’s very rich so I don’t suggest making it a habit. I had mine with walnuts – I needed to make it healthy somehow! Sorry about the odd looking photo. I forgot the camera so I had to rely on Scott’s iphone.

Home Sweet Home Chicago

Wow – it’s GREAT to be home in sunny Chicago! Sorry my posts have been so short and sparse. However, now that my big meeting is over, I’m hoping to go back to my regular twice daily postings.

Well, after being away from home for a full week, I’ve come home to a fully-cleaned house, lots of paperwork, and leftover Halloween candy. After walking in the door and unwinding for an hour or so, I realize that there several things that I’m going to miss about being away on business.

Things I love about Business Travel:

  1. Running in new places – Exploring news cities on my daily runs is probably one of the very best things about business travel – at least for me. Can’t wait for Vancouver next year!
  2. Not having to clean up after myself – I am by no means a slob, but it’s definitely nice to not have to worry about making the bed or cleaning the bathroom.
  3. Not having to deal with the mail and other paperwork – I dread sorting and filing paperwork at home. So, if nothing else, business travel is a vacation from the giant paper mound at my house.
  4. Spending other people’s money – Want a magazine? No problem? Need a Starbucks? Go for it. As long as it’s not my money, I don’t think twice about these little luxuries – although I don’t take advantage of it either.
  5. Having “people” – Aside from the great hotel staff who are always willing to help with a reservation, etc., we regularly hire vendors to help us with our meetings. This allows us to spread the craziness across many more people and take some of the pressure off of us.
  6. Taking the elevator downstairs to work – With a 45-minute commute, each way, from my regular office, going 8 floors down to work is a bonus I will greatly miss!

On the other hand, there also many things I miss about home when I’m away on business:

Things I love about coming home after Business Travel:

  • Eating home-cooked meals – I love going out to eat but eating at restaurants twice daily for a straight week is a bit overkill. I’m really looking forward to some of Scott’s great cooking!
  • Having a normal sleeping schedule – Ok, I admit it, I just can’t hang with the college crowd anymore. Getting up at 5 AM and not getting to sleep until 11 PM or later is tough, especially when you do it for 7 days in a row. I’m sure I have a bunch of new wrinkles to show for this crazy sleeping schedule.
  • Not having junk food around every corner – As I have explained in the past, my organization never does anything small, especially when it comes to food. This year at our meeting the food was fairly good, and somewhat healthy, although there were still plenty of unhealthy items to balance it out!
  • Sleeping in my own bed – We generally stay in very nice hotels with equally nice beds, but no matter how nice the hotel bed is, I never sleep as well in a hotel bed than I do my own.
  • Seeing my husband – Although we talk on the phone and video chat, I’d much rather prefer relaxing on the couch, chit-chatting with Scott after a long day.
  • Now I am back to reality and looking forward to a clear sense of normalcy – for my life at home, work, and as a blogger.

    The Traveling Runner

    One of the best things about traveling is the great opportunity I have to run in fun and exciting places. I have been fortunate enough to run along a tiki-torch lit path in Maui; in balmy weather in Mexico; in and around Kensington Park and Palace in London; and along a Mediterranean beach front on the coast of Spain.

    And this week, my job has been kind enough to indirectly support my travel and running habits because today, I ran along a fantastic pathway along the Pacific ocean. My 4-mile journal took me along cobblestones, gravel, and pavement, but all among the fresh, clean, and salty sea air. Not only did I have an amazing view of the water, but everything that comes with water, including sailboats, naval ships, and pelicans! Being away from home due to business is definitely hard. You’re not sleeping in your own bed, you live out of a suitcase, and you have to deal with airport hassles. Yet somehow, running in the cool, crisp air along the Bay in San Diego –  hearing the waves hit against the rocks, makes being away from home that much easier.

    And, on my way back from my glorious run, there just so happened to be a Starbucks across from my hotel. Perfect timing and a perfect convenience…

    If you can’t tell, I tried to take a photo that incorporated my lovely latte with the perky palm trees below. However, this was not the extent of my breakfast. Raisin Bran Crunch awaited me in the staff lounge, taunting me a little because I arrived too late for the hot breakfast.

    After setting up my meeting room and doing “work” things, it was time to head back to the staff lounge for a bit of lunch…

    I started with my version of a cosmopolitan salad, which was a mix of green leaf lettuce, squash, roasted veggies, tomatoes, cheddar cheese, and bacon. It felt sooo good to eat a salad today, especially one with tons of goodies. My salad was quickly following by a cup of bake potato soup with a few fixins’…

    Hmmm… good, incredibly tasty and filling. 

    There was no “dinner” per se tonight, only a series of buffet lines and pasta stations at an evening reception. I ended up having a little pasta with side of huge green olives and aged cheddar cheese. The food was actually really good – too bad I had to eat standing up – a situation I hate nearly as much as I hate eating in the car. But, when you’re tired, hungry, and are threatened with a group karaoke song, you just have to eat and then get the hell out of there!

    On the way back from the reception, I stopped in our staff lounge and found that there were still 3 cupcakes left from yesterday! How fantastic because I just so happened to be craving a cupcake – a chocolate peanut butter cupcake to be exact….

    This was definitely NOT as good as it would have been last night when I actually bought it, but it was still a melt-in-your-mouth, peanut buttery cupcake.

    Now I must leave you for the evening before I fall asleep.

    The "Glass Slipper" of Running Shoes

    Hello Everyone!

    I have to make this quick because the car service is picking me up for the airport at 6:45 AM tomorrow and it’s already 11 PM!

    I had Happy Feet in my new 2010 Nike Air Pegasus running shoes! I have been wearing the Air Pegasus for about 10 years and absolutely love the way they feel. When I put these on for the first time a decade ago, it felt like Cinderella finally fitting into her glass slipper – a perfect fit – without the horse-drawn pumpkin.

    Avid runners know how important finding the “right” running shoe is for their performance. Runners can also tell a good shoe from a bad shoe within seconds, many times without even trying the shoe one. And, when runners finally find their “glass slipper” of the running shoe – the perfect match in their running life – they rarely stray from that style of shoe, or at least the brand. I just pray Nike never puts my glass slipper out of commission!

    So, with my new shoes on, I went out to run 4 miles in 55 degree weather – again, perfection! It was just beautiful outside this morning. At one point, I ran under a huge maple tree, with all of it’s leaves still on it, and a big gust of wind blew a shower of fresh leaves on top me. I love the Fall!

    The rest of my day went like this:

    • Lunch with Scott
    • Hair appointment
    • Dentist appointment
    • Trip to the bank

    I literally had no time to rest today, except for when I was getting my hair done. However, I am very happy to report that I am all mostly packed and ready to go. But I still have a few more emails to answer before I go to bed.

    Eating With One Foot Out The Door

    Hey Friends! 

    Yikes! This time next week I will be all packed and ready to head to sunny San Diego. Boy, this meeting sure came up quick. Even after a whole year of planning, I still feel like I need more time to prepare.

    Even though I’m a little lot stressed at work and always seem behind schedule, I still find time to run – no matter what. And, believe it or now, even when I work 10-12 hour days at our big meeting, I get up at the crack of dawn, actually before the crack of dawn, and run on the treadmill in the hotel. My coworkers say I’m crazy but really, it’s one thing that keeps me sane and feeling healthy during the busy week.

    This morning started with a 4-mile run on the treadmill (55 degrees, but raining outside 🙁 ) Breakfast was a bowl of Honeynut Cheerios and walnuts…

    I was practically eating this cereal with one foot out the door because I was running so late. I really do NOT like eating “on the run”. I either don’t feel satisfied or my stomach ends up hurting. But, even with my tardiness, I did manage to stop by a Starbucks for a nice mocha frap – ahh, now that was worth being an extra 7 minutes late.

    I only had one meeting this morning. Thank goodness for that because I have a bunch of “little” things to take care of before I leave. All of these little things have been put to the back burner so that I could take care of the big things. But now all of the little things have piled up and have become one BIG thing. Are you confused yet?

    I stepped out, in the rain no less, around 1 PM for a little soup-to-go…

    I didn’t even have time to put this in a fancy smancy bowl for y’all – just ate my minestrone straight out of the paper cup!

    My commute home from work was terrible, even though I left at 4:20 PM! I was so happy to be home after 45 minutes of being in the car. I was also happy because I was able to see Scott before he left to teach his class. He made homemade chicken soup for us for dinner! It was piping hot on the stove which I promptly transferred straight to my bowl…

    Yes, those are homemade noodles!!! A man who makes his own noodles and is a tech guru? Can it get any better than that?

    After dinner, I was so busy doing laundry and playing on the Internet that I completely forgot about the new episode of The Office! Oh, where would I be without Hulu!

    But, I DID remember to eat a little dessert…

    It was another Cherly & Co. cookie that I snagged from work yesterday day. This double chocolate frosted cookie was fantastic! Honestly, it really was much smaller than it looks in the photo 😉

    Now I’m off to do a little shopping – online! I still need some new clothes for next week and I have T-7 days to get them.
