Squeezing Pears and Roasting Potatoes

Hi there!

Today was an absolutely beautiful day in Chicago! When I headed out around 10 AM for my 5-mile run, it was already 52 degrees and sunny! I hope we have many more days like this throughout the fall/winter season. 

After my run, I grabbed another LUNA bar to recharge…

I do not eat LUNA bars or any granola/power bars for breakfast on a regular basis. Although they are very nutritious – full of protein and fiber – I really don’t feel like they fill me up enough at breakfast. But, like yesterday, today was another day of running a crazy amount of errands, so LUNA always comes in handy when you’re in a hurry to get out the door. 

My day was full of shopping, which let me back to Target – yet again – to get Christmas tree lights. It never fails, no matter how careful we are with our lights, we always end up buying new ones because the old ones don’t work.

I also stopped at Trader Joe’s. OMG, you would have thought they were giving turkeys away! I go to Trader Joe’s about once a week and I have NEVER seen it so busy. In fact, my regular grocery store, which I went to after TJ’s, was not 1/2 as busy as Trader Joe’s. It’s the holiday craziness starting already.

I headed back home for lunch, which ended up being another yummy sandwich…

But I also enjoyed one of the fresh pears I bought at the grocery store. I must have really been on my squeezing game because I picked a perfectly ripe pear and it was so juicy and delicious…

I even picked up a few more when I went back to the grocery store today. Hmm, I’m thinking a pear crisp might be in my near future…

After picking up a few things at Harry and David and Barnes and Noble (I really should own stock in that store!), it was time to head home to put up the tree and lights…

I even put out one of my favorite Christmas decorations, the Santa Train, as I call it. This is by far the best impulse purchases I’ve ever made – and it was at Costco! It’s a beautiful and very detail 4-part wooden train filled with old-fashioned toys – that are real toys!

That is one thing that I’ve come to learn about Costco – If you see something you really like, buy it, because it may not be there the next time you go.

Scott was working most of the day trying to finish project before Thanksgiving. So, I volunteered to make us dinner – and it wasn’t just reservations or take-out!!

I whipped up some burgers on our indoor grill – turkey for me and buffalo for Scott. I also made some awesome oven roasted potatoes. These were super easy to make. Here’s how:

Easiest Oven-Roasted Potatoes

  • 4 medium red-skinned potatoes, washed and cut into cubes/chunks
  • 3 tablespoons olive oil
  • Salt/pepper to taste.
  • Mix the oil with the potatoes in a bowl and add salt and pepper. Spread potatoes on a baking sheet and bake for 20 minutes in a 400 degree oven that’s been preheated. Take out tray and flip potatoes over. Return to oven for 10 minutes. Broil for 3-5 minutes if needed – then enjoy! 

For variety, I have added rosemary, Italian seasonings, and or parmesan cheese to the potatoes prior to cooking. It just gives them a little extra flavor.

    Now,  I must be off. I have a ton of wrapping to do before Thanksgiving – when my side of the family exchanges our Christmas presents.

A Salad Duet

So this morning started off very early, or what seemed to be really early. I didn’t end up going to bed until nearly midnight and then my alarm went off at 6 AM. I really wanted to just stay in bed but I knew I’d better run today because I did not run yesterday. 

It has not been getting light until 7 AM here in Chicago – yikes! That is way too late for me to start running during the work week. So I was on the treadmill again today. I’d better get used to it because winter weather will be here before I know it. However, with the time change this weekend, it will get light by 6 AM instead – bonus!

I literally had my breakfast in-hand this morning as I walked out the door…

There’s nothing wrong with a little all-natural creamy peanut butter on Brownberry’s double fiber bread. Gotta love that it’s a very nonmessy and portable breakfast.

I was heads down at work from about 9 AM to 1 PM. I’m so glad I brought my lunch because I had no time to run out…10.28 lunch

Leftover taco salad saved the day! The protein in the meat and cheese was a huge help after a full morning of work. It kept me energized all the way to dinner too. 

Dinner ended up being a close replay of last night (and today’s lunch actually) – a salad duet if you will. Scott baked parmesan crusted chicken tonight, but I chose to have mine in a salad rather than eating it with potatoes and steamed carrots…

I’ve just been in the salad mood lately. This is the third one I’ve had in two days! Salads are so easy and healthy to make, especially when you have a salad spinner. I just chop all the lettuce up at once, rinse it off really well, spin it, and leave it in the fridge for a week. I take the lettuce out whenever I’m in the mood for a quick salad, or we use it for other things like tacos. Again – so easy!

After dinner I headed out to finally get my new running shoes! And that is exactly what I did. I’m so excited that I have new shoes to run in and I’m especially glad that I have new shoes for my trip – the old ones were getting pretty bad. I didn’t take a picture of them tonight because of the bad lighting, but I’ll post one tomorrow for you all to see. FYI – I am very picky about my running shoes. I have worn the same make and model (hmmm….sounds like a car) for most of the last 10 years.

On my way back from Dick’s Sporting Goods, I stopped at Cold Stone to pick up ice cream for Scott. I had a coupon to buy 2 ice creams for $5 so I ordered one too, just to save money really 😉

I’m not very fancy when it comes to my Cold Stone. I usually just get chocolate or dark chocolate and one mix-in. Tonight, it was chocolate and red velvet cake! Kudos to Cold Stone for venturing into the red velvet cake territory – it is a favorite of mine, especially when the cake is done right. I also tried a little taste of the pumpkin ice cream – hmm…not a fan – way too pumpkiny, but then what did I expect?

I am off tomorrow as is customary the day before I travel. Then, Friday is the big day – I’ll be off to sunny California. My brother and his wife live there and I’m so excited that I get to see them on Friday night for dinner!

Costco Blowout

Evening everyone!

Hope you all had a great Friday. Today is my typical day off, but I found myself working on and off from home. This is how it goes every year around this time. 

After a rousing 4 mile run on the treadmill (still raining – ugh!), I enjoyed a big cereal mix…

I had Honeynut Cheerios, with Kashi Go Lean, and Kashi Go Lean Crunch. It tasted sooo good! I miss you Kashi Go Lean Crunch – so glad that you were on sale this week 😉

Scott was home today as well and he worked ALL day on a project he has coming up. I guess it’s just work, work, work for us. We did stop for some lunch and surprise, we actually stayed home for lunch today!

We really did consider going out to eat. However, Scott made so much chicken soup yesterday that we decided to save money and just eat at home.

After lunch, I ran up to Costco to get just a few things and wound up spending nearly $200!!! Oh my gosh, how can stores like Costco and Target cause me to spend that much money in one outing??? Of course, I had to get essentials, like chicken, Italian sausage, and ground turkey. But I also bought $80 640 ct. cotton sheets, and a few Christmas presents.

Later in the afternoon, I had a little snack to take the edge off of my shopping trip…

Ahh, popcorn! I just love popcorn especially when it’s only 100 calories a bag.

This dish is so incredibly yummy and super easy to make. It’s rather versatile too – you can change up the peppers, or add peas, mushrooms, or other veggies if you want.

After dinner, we popped out to the bookstore for a bit. I love checking out the new calendars and planners for the upcoming year. I saw at least 4 that I would love to buy. Only problem is that I’ll use them for a month and then never look at them again. Does anyone else have that problem? 

On our way back from Barnes and Noble, we stopped at the Cheesecake Factory to pick up a slice of Chocolate Black-out Cake. They actually used to sell this cake at Barnes and Noble, go figure, but in a smaller version (it was cheaper too). However, they stopped selling the cake last year and now we must go right to the source to get our fix. Mind you, we do NOT do this very often because the cake is more than $7 a slice!! But it is sooo worth every penny!

Now, we’ve just settled down to watch Numbers on CBS. No more Psych until next year – sniff, sniff. But, very soon we will find out who killed Trudy on Monk.

It's 3 AM, But I'm Not Lonely

Happy Friday everyone!

I’m watching Psych right now and loving it! I really should go to bed since I only got about 4 1/2 hours of sleep last night. I woke up at 3 AM and just couldn’t go to back to sleep. I actually started thinking of that song by Matchbox 20 – It’s 3 AM. But, I wasn’t lonely just anxiety-ridden.

I got up around 4 AM and actually worked for a few hours. How dedicated is that? Breakfast was another cereal bowl, but this time with a new cereal…

I received a free sample of Total blueberry pomegranate in the mail so I threw that into the mix with Cheerios multi-grain and Kashi Go Lean. I topped the cereal with a bunch of walnuts for some extra MUFA and crunch. The Total cereal sure smelled good when I poured it into the bowl – very fruity. It added a little bit more sweetness to my normal cereal mix, which was surely welcome. But I really don’t think it was anything extraordinary, but then again, I’ve never been a big Total fan.

Scott and I opted for lunch at Portillos today – a Chicago hot dog/Italian beef favorite. I ordered the all-beef hot dog with everything…10.9 lunch

Really messy, but awesome! I did NOT eat the pickle right on the hot dog, but I left it on for the picture to give you the full effect. If you ever want to see a crazy place at lunchtime, just go to Portillos – it’s nuts! There were so many people in the restaurant that we almost didn’t find a seat.

Take the Cake….Out of My House!

Evening chicas! I first want to give a shout out and a huge CONGRATULATIONS to all of our fellow female food bloggers who received FoodBuzz Blog Award nominations. Good luck to all the nominees!

Today was such a productive day! Really, I felt like I was flying through project after project and putting out fires along the way. 

This morning, I was on treadmill about 6:30 to run for about 15 minutes before heading outside. It had just rained about 2 hours before so the ground was still wet and the air had that wet Autumn leaf smell that I love. I only ran about 4 miles total – it was all I could do today because I was running late for work.

After my run, I grabbed a simple breakfast…

A high fiber English muffin with all-natural creamy peanut butter.

Somehow, even after waking up at 6 AM I still didn’t get to work until after 9 AM. I really have to streamline my morning routine.

About mid-morning, I became a little hungry and went to my granola bar stash in my drawer. I tried the Market Pantry high fiber peanut butter and oats granola bar.

I was excited to try this bar because I love “high fiber” foods. But, after one bite, I knew this bar was not for me. I did not like this bar at ALL. It’s hard to even tell you what I didn’t like about it because after just one bite, I grimaced and threw it away. I’m glad I didn’t waste 140 calories on that one!

So, it was on to lunch! I was so hungry by the time I stopped for lunch that I ate it so fast and I didn’t stop to take a photo (oops!). But rest assured, it was the same thing that I had for dinner last night – sausage and pasta with leeks. Nothing like leftovers!

I had it with a size of elbow noodles, topped with white cheddar cheese – yummy!

The chili was pretty filling, but I still went for another piece of chocolate cake to finish off the night…

This cake is sooo good! But, I would be extremely relieved if I came home tomorrow and it was all gone. Please take this cake out of the house!

Now, I’m watching reruns of The Office and contemplating whether or not I should do more work. I think not – I see my new Shape and Fitness magazines staring at me just begging to be read!

Food and Football – A Perfect Sunday

Hello Girls! Wow – what a beautiful day it was here! It was about 72 degrees and sunny – just perfect! 

Well, in honor of my 8th wedding anniversary, I thought I’d give you a preview of the anniversary photos for tomorrow’s post….

This is Scott and I while on a cruise a couple years ago. You might not be able to tell, but we were quite tipsy from all of the wine! Believe it or not, I ran 5 days on our 7 day cruise – even in choppy waters! As for my husband, I don’t think Scott saw the inside of the fitness center at all that week – he he! Ahh..good times! Stay tuned for more pics tomorrow….

Now, onto today…

I was out the door by 7:30 AM to go for a fast 6 mile run – it took me just over 48 minutes – yeah! I love when I have really good runs, they usually put me in a great mood for the rest of the day.

I did have a 1/2 Luna bar just prior to my run which I think helped with my endurance and speed immensely…

This Luna bar was pretty tasty with a great peanut butter flavor. It only has 3 g of fiber though which is not terribly high for a power bar. After my workout, I was running late to make 9:30 Mass, so I ate the other 1/2 of my Luna bar in the car. I was so glad that I did because Mass ended up being nearly 25 minutes longer than expected. I think I would have passed out if I wouldn’t have eaten ahead of time!

After church, we headed back home for an hour or so then it was back out to lunch at Go Roma. Between work and home, I eat at this place WAY too much – but it’s so good and convenient – not to mention relatively healthy.

I had the vegetarian panini with spinach, red peppers, tomatoes, onions, and goat cheese. It was quite good, although I stopped eating about 3/4 of the way so I wouldn’t get too full.

The rest of the day consisted of cleaning (outside and inside) and watching the Chicago Bears beat the Seattle Seahawks! Scott was very happy of course.

For dinner, Scott made his awesome turkey tacos with all the fixins…

I only had two soft tacos – full of lettuce, meat, salsa, cheese, and guacamole – and I was pretty full by the end.

Now, I’m off to do a little light reading and then to bed. I have another early and jam-packed Monday planned, that starts with a 5 mile run!

Sunday Morning With Bob Marley

Running With Cake Fact: I ONLY run in Nike running shoes. I haven’t worn any other running shoe since high school.

It’s so nice to actually sleep in on a Sunday. Before I started my typical run, I had a little pre-run snack..

I had 1/2 of one of my LUNA bars – Nutz Over Chocolate. I usually only eat power bars half at a time. Any more than that and I’m afraid I may feel too full during my run.

As far as nutrients, this bar had 180 calories, 10 g of protein, and 3 g of fiber. Plus, it combined two of my favorite things – nuts and chocolate! The bar tasted awesome…I just really wish that there was more fiber in it.

My run consisted of a quick 5-miler. Although I was well-rested and it was a gorgeous morning, I just wasn’t in the mood for a longer run – I’m sure you all have been there.

I wasn’t too hungry when I came home from my run, so I ate a simple breakfast of fresh, whole fruit…

A super yummy pear! I used to hate pears as a kid – I’m not sure why, maybe it was the texture. Now I love them – although they have to be pretty ripe for my taste.

After the pear, I still had a taste for something a little sweet, so I picked out a few fresh strawberries….

Now these beauties were VERY sweet and juicy! Just like watermelon, I am sooo going to miss strawberries in the winter.

The rest of the morning/early afternoon was spent house cleaning. My in-laws are coming for dinner and somehow, the house looked like a tornado swept through it. It’s not as if I don’t clean EVERY day, so how does it get like this?

While cleaning, I listened to the melodic sounds of Bob Marley. I typically can’t wait to listen to Bob Marley, Jimmy B, and all of the other summer favorites. But this summer wasn’t that hot and most of the time, it just didn’t feel like summer. Hence, Bob and Jimmy were barely played at all the last few months. I guess today was as good a day as any to bring them back out for a final summer fling. Now, for the next month or so, it will be my Autumn transition music (what I play until I’m allowed to play Christmas music in the house), including Jack Johnson, Sarah McLachlan, Tori Amos, and plenty of classical.

I stopped mid-cleaning and had a simple lunch…

…which was a 1/2 salami and ham sandwich with cheddar cheese, and Mezzetta hot peppers, all on 12-grain Brownberry bread. Plus, I had a handful of carrots and my tasty Cape Cod potato chips!

We’re making homemade minestrone soup for dinner tonight, so I’d better get chopping!

Dinner Cereal with a Side of Chic-Lit

Hello everyone! I’m feeling so much better than I was earlier today. I’ve decided I’m not going to let a few sour apples spoil my work endeavors!

Even though I only had one piece of not-so-good pizza and a little salad for lunch, I just wasn’t hungry for dinner. I came home around 6:30 PM, cleaned up a bit and then debated on dinner. I knew I needed to eat something. Then, I remembered my special delivery from a few days ago…

My new Kashi Heart to Heart cereal finally arrived! This was a single serving size box – even though it looks full size. It was just perfect for a light dinner, but still full of nutrients. The cereal has 130 calories per serving and 4 g of fiber. Plus, it has little clusters of blueberries!

I added raspberries to mine to give my cereal a little more kick, but you can clearly see the blueberry cluster right up front. Holy yum this cereal was fantastic! The blueberries even made my milk turn blue! I would definitely buy this cereal – even when it was not on sale – he he! I just wish it had more fiber like their other cereals.

QuestionHow do all of you feel about cereal for dinner? I don’t eat cereal for dinner very often, only when I’m not hungry or there’s absolutely nothing else in the house.

After my very long and tiring day I am really ready to curl up with a good book. Aside from Harry Potter re-reads, I haven’t read a book for fun in sooo long! I used to be really into the Shopaholic books, but stopped after the first chapter of the Sister book. Now, I’m psyched to read….

It’s another book set in England, but this time with an American heroine. I just love books set in Britain, especially when there’s a young British heroine. I mean, who didn’t love Bridget Jone’s Diary?  I also plan to have a little snack while reading my new Brit Chic-Lit…

A Bit of A Power Bar Snob

So much for leaving at 4:30 PM like I had planned. I didn’t leave work until 5:45 PM and didn’t get home until nearly 6:30 PM. But, on the bright side, I did get a LOT done. It is really crunch time for me now (and for the next 5 weeks) so every hour of every day counts.

When I finally arrived home from work, I was just aching for something tasty. Well, I got my wish! My husband and made one of my favorite meals – linguini with homemade meat sauce!

Italian dinners like these always seem so comforting and just make your day seem so much better. 

Aside from my fabulously yummy dinner, I had another surprise waiting for me at home – a full box of goodies from Cascadian Farm, makers of over 75 organic food products. This company has actually been around longer than I’ve been alive! I only just recently noticed their cereal products in the store, but never bought them because I hadn’t heard anything about them.

Well, the very nice folks at CF sent me several of their products to try, including their version raisin bran cereal, two kinds of granola, and two types of high fiber granola bars. That was great news to me because I have really been into fiber these days after reading the Full Plate Diet.

So after dinner, I tried one of the granola bars – the fiber right dark chocolate almond bar to be exact.

Doesn’t that description and flavor combination sound yummy? Well, when I tore open the bar I was pleasantly surprised to find that the bar was drizzled with dark chocolate which, by the way, had a very good taste – not too “organic”. The granola part of the bar was good, but nothing extraordinary. But, I’m very hard to please when it comes to granola/power bars. I’m a bit of a power bar snob I guess, and I haven’t had much luck with them lately.

As a whole, I thought this bar was definitely better than all three Odwalla bars I tried last week, but not as tasty as the LUNA bar. I would absolutely have this bar again, if not for the yummy chocolate drizzle, then for the 5 g of fiber (and only 130 calories) that this bar has!

Can’t wait to try the Dark Chocolate Almond Granola for breakfast! 

I’m off to bed. I have the first of three staff training sessions tomorrow and I’m leading all of them! So, wish me luck!

A Tale of Two Kashi's

Morning everyone! Just when I thought I was over my cold, I went to bed stuffy and woke up stuffy once more. I guess it really is cold and flu season. I didn’t let a stuffy head keep me from running though. Although, I was out the door later than I had planned – 6:30 AM. Yikes! That’s late for me for a weekday run. I could only do a fast 4-miler because I was pressed for time.

For breakfast, I decided to NOT eat a full bowl of the really high fiber Kashi (10 g). It was probably a little too much on my system yesterday. So, I opted for a cereal mixture – two Kashi cereals – Go Lean and Original – both high in protein and fiber. After all, what’s better than a bowl of Kashi cereal? A bowl of two Kashi’s mixed together!

Although I’m sure Scott would disagree. My husband has “issues” with mixing things. He can’t mix noodles (Rotini with elbow? God forbid!), cereal, or other foodstuffs. But, I have no problem mixing and matching, especially with cereal. And, that goes double for two awesome Kashi cereals! In addition to cereal, I had a shot of wellness from Zola and a small bowl of watermelon juicy and sweet watermelon chunks…

Ohh..so good! 

I didn’t get to work until nearly 9:30!! Oh my, that is so late for me – I wonder if anyone noticed me slinking in so late?? But, when I arrived at my desk, I was delighted to find a bunch of little surprises all over my desk. A girlfriend of mine from work has been in Europe for two weeks and brought back a ton of little mementos for me (not tchotchkes Holly – this stuff I can actually use!).
