1,600 Calories in Two Days

The title of this post really says it all. In the last 24 hours, I have consumed about 1,600 calories, equaling about 800 calories per day. No, I’m not trying some crash diet. I have been very sick since Sunday night with both the stomach and respiratory flu. Not a good combination. 

As I mentioned last night, I was only able to make it though a 1/2 day of work yesterday. In all of my sick glory, I was only able to eat some jello, two cookies (later in the day), and sip a little Sprite. As you can imagine, I was so weak this morning that I was not even going to attempt running. I did make it through a whole day of work today and was able to keep down a piece of toast, followed by some chicken soup for lunch.

By dinner time, I was feeling much better and actually quite hungry, so I made myself a little sammie…

I had very high hopes for this salami and cheese sandwich, but after eating just 1/2 of the sandwich I was feeling very full and a little sick again. I tried to eat the apples as well…

But I guess when you’re sick, nothing tastes good, not even sweet, crunchy apples.

When I weighed myself this morning, I was sure I had lost 2-3 pounds, given how much I was sick and how much I did not eat. However, I was only one pound lighter. But, after I thought about it, I was in bed practically the whole day yesterday, so I was not exerting much energy – not enough to burn significant calories. 

I honestly don’t mind losing a pound here and there when I’m sick – it all balances out anyway. But what I don’t like is not being able to eat – due to loss of appetite or whatever. If you can’t eat, you can’t fuel your body with calories which help you engage in your daily activities – especially exercise, therefore you feel tired, weak, and just plain blah! And anytime I can’t exercise – well, let’s just say I’m not much fun to be around. Conclusion..being one pound lighter is not worth being sick – AT ALL!

Sick, Sick, Sick

Hi Everyone. I’ve been sick as a dog all day. I woke up at 3 AM with a wicked stomachache. It could have been the undercooked sausage from last night or it could just be that I have a tummy bug. Nonetheless, I went to work feel ing terrible. Then, I came home from work about noon and, except for about 30 minutes, didn’t leave the bed/bedroom.

I hate being sick. I’m going back to bed.

Working and Working Out

Hey there!

I don’t know about you but my Sunday just flew by – probably because I spent most of the day either working or working out. I started with a 45 minute interval workout on the treadmill (the rain kept me inside today – blah!). The run was followed by a 15-minute ab workout. I love ab-toning exercises. They not only make you look really in shape, but they are great for strengthening your core.

Next up, a little breakfast…

And yes, it was little, probably too little. It was about a 1/3 cup of Trader Joe’s vanilla Greek nonfat yogurt, with about a teaspoon of peanut butter and a teaspoon of chopped walnuts. I know that this was not enough because about 45 minutes later I was starving! I grabbed a few pretzels just to take the edge off until lunch.

And speaking of lunch, I had leftover turkey chili with elbow noodles..

I don’t know what was with me today, but I just could not judge portions sizes. This ended up being only a 1/2 cup of chili and about 1/2-3/4 cup noodles. After such a small breakfast, this was way too small of a lunch for me. But Scott very nicely offered to share his turkey burger, so I decided to take him up on his offer and have 1/4 the burger.

The rest of the afternoon was spent working – and I mean working! Because of all the craziness at work with this potential new project, I am working in overdrive. I headed to Barnes and Noble – my office away from home – for some quiet work time. I did enjoy a nice mocha frap while I was there – via gift card of course!

Dinner was a household favorite, Italian sausage with peppers and leeks…

I LOVE this dish – it just never gets old. Although tonight, the sausage seemed a little underdone. I guess we’ll all find out if we get sick in the middle of the night!

After our stomachs (and the kids) were settled, Scott and I headed into the basement for a little workout. No, not that kind of workout (get your mind out of the gutter 😉 ) He’s been going on the treadmill at night pretty consistently for the last few weeks. He’s trying to increase his fitness level for some of our big trips we have planned in the coming months.

Many of you have posted on how you do double workouts a few times a week. I have done this in the past and, although it’s hard to keep up with on a regular basis, I do find that I can keep my weight down fairly easy when I do this. So tonight, I thought I’d try doing the eliptical. I haven’t been on the eliptical in YEARS!!!! Let me tell you, doing the eliptical was so much HARDER than running. Not only was I dripping wet with sweat after just 10 minutes, but I could barely make it through the 20 workout – on no higher than level 4 – yikes! And I thought I was pretty in shape.

Funny thing is, I was extremely tired at the end but it said I only burned 90 calories. I burn about 400-450 calories after 40 minutes on the treadmill! I think it’s safe to say I’ll be sticking with running.

Now, completely exhausted, I’m about ready to dig into some of my father-in-law’s leftover almond crunch cake…

Ahh, so good, and definitely just as tasty as it was last night.

Take the Cake

Happy Saturday everyone,

I am super tired right now, so I’m going to make this quick. We celebrated my father-in-law’s birthday today with dinner at their house. After a very hearty meal of zesty meatloaf, homemade macaroni and cheese, and scallop potatoes, we were treated to this…

An Almond Crunch and Chocolate Confetti Chiffon Cake, baked by none other than my father-in-law himself! I guess he has been waiting for ten years to make this cake – no joke. The recipe was from a Fine Cooking magazine from May 2000!

By now  you know that my father-in-law is a fabulous baker. He and my mother-in-law even contemplated opening their own bakery a few years back. So, I was not surprised at all that this cake was fantastic – it tasted as good or even better than it looked – if you can believe that! This proves that it pays to save those old recipes – you never know when they’re going to come in handy. I had one nice size piece, but could have easily eaten more. I did end up taking a piece home – AM coffee/tea cake, anyone?

Fine Cooking magazine really does have some great recipes. Now that I think about it, I subscribed to the magazine over a month ago and I still haven’t received my first issue – ugh!

Ok, must run for now. Tomorrow is a busy day full of WORK! That’s right, because of a HUGE new project (yes, it requires even more travel) I have to work this weekend.

Also, it’s supposed to be about 40-45 degrees out in the AM, so I’m hoping to get a long run in outside – fingers crossed!

We Need to Eat More Beans

Tonight, Scott sent me an email that said “We need to eat more beans.” – hmm, speak for your gassy self honey. This statement was followed by a link to a Men’s Health article about the Top Weight Loss Foods for 2010. I don’t normally read Men’s Health articles, but I was intrigued to see what foods made the list. Of the nine foods listed, there were a few regulars, but also a few surprises.

  1. √ Full-fat cheese – This is a great source of the muscle-building casein protein and protein helps you feel full, which will, hopefully, lead you to eat less. I’ve got this one covered – hands down!
  2. Pork Chops – Helps preserve muscle during weight loss. Sorry, not a big fan of these and never have been – not even with applesauce. 
  3. √ Iced Coffee = This cold beverage may help reduce your appetite while also increasing metabolism. I wonder if Starbucks’ mocha fraps count? Ice, coffee – it’s the same thing -it’s just blended. That’s it, I’m counting them.
  4. Grapefruit – Researchers speculate that the acidic nature of this potent fruit may help slow digestion, which keeps you feeling full longer. Again, not a fan, but I love the scent of grapefruit. Too bad the scent alone can’t help with weight loss.
  5. Apple – The forbidden fruit is loaded with fiber which keeps you feeling full. This is definitely on my list to eat more of.
  6. Eggs – Studies show that those who high protein foods, like eggs, for breakfast felt fuller longer and were less likely to overeat during the day than those who didn’t eat a high protein breakfast. I do like eggs, but I don’t eat them very often. Probably because I feel that they are more of a breakfast food, and during the work week, I don’t have time to make them in the morning.
  7. Beans – Legumes may help fight hypertension, but this fiber-rich food also keeps your belly full.  I do like beans but choose not to comment on the after effects.
  8. Salmon – Foods high in Omega-3s, like salmon, may have a satiating effect on our appetites. No deal – I don’t care how pretty it looks on a plate, I’m not eating salmon.
  9. √ Milk – We all know milk is a great source for vitamin D, but it’s also rich in protein, which keeps you feeling full. Milk is good – now, if I could just stop eating cookies with it!

See a pattern yet? Almost all of these foods are linked to keeping you full longer, which helps you eat less and lose weight. So, how many of these weight loss foods are you eating?

Today's Rant: Unhealthy Airport Food

I’m back from DC and pretty darn tired – blah! I’m actually feeling pretty “fat” right now too, considering I sat in a meeting for most of the day and then sat on the plane coming home. I am so looking forward to my run tomorrow morning. 

OK, now for an airport/travel RANT…

Why is it that Washington Reagan Airport – I’m sure one of the busiest airports in the US – has such terrible food options???? Maybe it was just the terminal/wing I was in, but I seriously had 4 options for quick-service food, and only one that I would even consider as edible (Potbelly). Plus, no Starbucks in site after you pass through security. Sure, there was a Starbucks before going through security, but I would have had to chug my drink or throw it out before going through – what gives DC??

O’Hare – you have set the bar so high that I’m spoiled for life.

A Dessert Triple Play

Hello everyone!

I just came back from a fabulous dinner with my friend Prachi! Prachi is a Washington, DC, local so she is very in the know when it comes to restaurants. During our conversations, she had mentioned a local hotspot called Matchbox, so tonight, Matchbox it was! Matchbox is a DC favorite that is a mix between bistro and Italian cuisine. Naturally, dinner started with little bit of vino…

Then it was time for some appetizer action. Because I don’t eat beef or seafood, there was only one option left for an appetizer… fried mozzarella with tomato and basil – aka a fried caprese salad!

But I was not disappointed AT ALL with my choice. This was fantastic – but of course, it was fried, so how could it NOT be good, right?

For our actual dinner – we split the Q special pizza with grilled chicken, mozzarella, red peppers, and mushrooms…

Pretty good but I stopped at two pieces because it had a little too much cheese for me. Plus, I wanted to save room for this baby…

What could be better than one dessert? How about THREE desserts! I really didn’t want to get this huge monstrosity of a dessert, but Prachi made me ;-). Apparently, she does not eat enough dessert at home and wanted to make up for it tonight! He he! The trio included a banana chocolate chip bread pudding…

This was much lighter than bread puddings I’ve had in the past and had a great flavor. Next up, the molten chocolate cake…

At one point in time, I considered myself a molten chocolate cake expert – tasting expert that is. So, I had high hopes for this cake. I was disappointed – the best thing about this was the vanilla gelato on top. Nuff said. Finally, the cinnamon doughnuts…

As most of you know, I am not a huge doughnut fan, but these little pastries reminded me of beignets, complete with kahlua creme dipping sauce – lovely and calorie-free I’m sure. Just to ease your curious minds, we did NOT eat all of the desserts, we both took a few bites of each and then called it quits. And believe me, that took some willpower. 

OK, I have a date with the hotel treadmill in the AM, then it’s off to a 7 hour meeting for me! Have a great night everyone.

Washington, DC: Congress, Coffee, and Cupcakes

Hey all!

I’m blogging from Washington, DC! Before landing, I enjoyed my go-to airport breakfast nourishment….

This was actually a combination of breakfast and lunch. The  yogurt cup is actually a pretty healthy choice as far as airport food goes. 

Upon arriving at the DC hotel, I was overwhelmed at how many “suits” were in the hotel lobby. I actually felt quite out of place in my jeans, so I hustled up to my room without looking at anyone. But then, I decided to venture off for a little 30-minute walk to find my next cupcake destination…Red Velvet Cupcakery

Don’t let the plain jane box fool you. Because when you opened it, there were these two lovelies inside…

My signature cupcake, the Red Velvet, and the Lemon Coconut cupcake. Hmm…so yummy! And, I would know because I ate both of them while sitting in my hotel room working. That’s what happens when I don’t eat a real lunch. Plus, on the way back from the cupcake shop, I stopped off to pick up a skim mocha…

This, unfortunately was NOT very good. It had a funky taste so I drank about 1/3 of it and thew the rest out. Blah! But hey, I didn’t have to pay for it!

Now, I’m off to meet my friend Prachi for dinner! I’ll be back later to fill you in on our dinner escapades!

Pretty in Pink Cara Cara Oranges

Hey out there,

Fitbloggin Info: If anyone is going to Fitbloggin, you may want to book your room at the Marriott ASAP. I just booked mine tonight and was told they had no more rooms left under the designated block. She finally “push it through” and gave me the conference rate. It looks like there are about 75 people signed up so far – at least there are 75 people with Web sites. Can’t wait!

As some of you know, a couple days ago I tried my first ever pink orange. I was at a loss for what kind of orange would be pink (kind of an oxymoron) but thanks to one reader, I now know where these pinkies come from. As quoted from the Sunkist Web site:

Cara Cara oranges, a type of navel grown in California’s San Joaquin Valley, are available January through April. Their outward appearance is similar to other navels, but their interior is a distinctive pinkish red and has an exceptionally sweet flavor with a tangy cranberry-like zing. Cara Caras are a rich source of Vitamins A and C, fiber and Lycopene. A perfect snack served as wedges, they’re also a colorful addition to beverages or squeezed into a vinaigrette salad dressing.

It just so happens that I had another pink orange today, and sure enough, when I looked on the sticker, it said Cara Cara!

Scott started teaching his night class again, so I was on my own for dinner tonight (well, actually with two kids in tow). So, it was a sandwich for me…

I put a few slices of lean ham and reduced-fat salami on a piece of double-fiber Brownberry bread, plus a little Swiss cheese for good measure. Apparently, when Mr. C saw the cheese, he had to know where cheese came from. I replied, “from milk that comes from cows.” He was satisfied with that answer. But when I added, “or milk from sheep,” he said, “but sheep don’t drink milk”. Not entirely true because sheep do drink milk, but it’s still funny, especially when that is my only entertainment for the night.

After dinner, I enjoyed one of the last pieces of the Trader Joe’s apple bread…

I am sorry to see it go so quickly, but luckily gingerbread is next.

2010 Trip #2: Washington, DC

As you’ll recall, two weeks ago I headed to Phoenix/Scottsdale for my first work-related trip of the year. Tomorrow, I leave for the second – to Washington, DC. My bags are packed, I’m ready to go…or so the old song goes. I am heading out a little earlier in the day to avoid the rush in the evening. Also, I really don’t like getting into a new city in the dark. I usually feel a little uneasy taking a taxi or public trans at night, particularly when I’m by myself. Fortunately, I am meeting an friend for dinner. I haven’t seen her in a year so it will be fun to catch up.

Saved By Gift Cards

Hey All,

Hope you all enjoyed your MLK day! I took advantage of the day off and slept in a little (until around 7 AM). It wasn’t until I got out of bed that I noticed something strange in the house – it was super COLD!!! Apparently, the heater went out sometime in the middle of the night. We were all walking around the house in hoodies and bathrobes until the heater guy came to fix the problem.

I did warm up a little in the interim with a 45 minute interval run on the treadmill, followed by a kick-ass ab workout! After waking up to the cold, I wanted something warm and fuzzy for breakfast…

So, a little Trader Joe’s apple bread hit the spot! I only had one small slice (watching portions ya know!) so a little later I munched on a 1/2 cup of Greek yogurt with a few walnuts…

A little Greek yogurt sure goes a LONG way, especially when you add MUFA-filled nuts. Tazo Awake tea was also on the cold morning menu…

Whenever I drink tea at home – which is quite a lot lately because I’m trying to drink more of it – my kids always ask for some. They are very young, so I only give them a little herbal tea to drink. They take a few sips then forget about it. This morning, I jokingly complained to Scott – why is it that whenever I make tea, no one drinks it? He responded with “that includes you” as he pointed to my mug full of cold tea. Touché!

I tried to get fancy for lunch by making my first ever butternut squash soup. Ok, honestly, it was Trader Joe’s butternut squash soup, but it was still my first time having it at home…

I hate to admit it, but at first taste, this soup was a little bland. But I added a few pieces of granny smith apple and some walnuts and it was much better. At just 90 calories a cup (without the garnish), this soup really is a great low-cal lunch.

I worked for a few hours this afternoon (it never ends, does it 😉 ) then we were off to IKEA to buy some shelves. Whenever I go to IKEA I am completely overwhelmed by the size and number of products in the store. We finally decided on some shelves after an hour, but when we finally located them in the “pick up” section, we realized the box would not fit in our car! OK, that was a wasted trip – blah!!!

But, not to despair, we ended up eating at Maggiano’s for dinner. For all of you wondering about our restaurant diet – we used our gift cards! Woo hoo – gotta love those gift cards. After eating what seemed like a whole loaf of bread, Scott and I split the house specialty – rigatoni D, with mushrooms, onions, chicken, and rigatoni all mixed in a marsala cream sauce.

When we lived in the city, we would go to Maggiano’s every other week, or so it seemed. And, we would most often order the Rigatoni D. But after a while, I just stopped liking the dish and stopped ordering it completely. After more than 5 years of being rigatoni D free, we decided to give it a try tonight. It was good, but then I realized why I really stopped eating it 5 years ago. Within an hour after eating, I felt sick, no doubt due to the cream sauce. No more rigatoni D for 5 more years – that’s it!

I’m actually still feeling sick right now, so I’m turning in early. Have a great night everyone!
